Role Overview

Position Summary – Donatello Hotel Maple Wood Hospitality is looking for an experienced and passionate Executive Chef to lead our culinary operations at Donatello Hotel Dubai. We seek a culinary leader who can drive kitchen excellence, manage operations efficiently, and deliver exceptional food quality.

Culinary Leadership – You will lead all culinary operations including kitchen management, menu development, and food quality control. Setting culinary vision, maintaining standards, and inspiring the kitchen team to deliver excellence consistently.

Hotel Experience Required – Proven hotel experience is mandatory for this position. Understanding of hotel F&B operations, multi-outlet management, banquet coordination, and the unique demands of hotel culinary operations including breakfast, all-day dining, specialty restaurants, and events.

Kitchen Management – Managing kitchen teams including chefs, cooks, and kitchen staff. Creating work schedules, conducting training, maintaining discipline, and fostering a positive kitchen culture that supports teamwork and professional development.

Menu Planning – Developing innovative menus that appeal to diverse guest preferences while maintaining profitability. Creating seasonal offerings, specialty menus, and dishes that reflect quality ingredients and culinary creativity.

Food Quality Control – Ensuring consistent food quality, presentation standards, and adherence to recipes. Conducting quality checks, tasting sessions, and implementing systems that maintain excellence across all outlets.

Cost Control – Managing food costs, controlling waste, optimizing purchasing, and achieving budgetary targets. Negotiating with suppliers, managing inventory efficiently, and implementing cost-saving measures without compromising quality.

Health and Safety – Ensuring compliance with food safety regulations, hygiene standards, and health department requirements. Maintaining HACCP protocols, conducting kitchen inspections, and creating a safe working environment.

Immediate Availability – Ability to join immediately is strongly preferred. We are looking for candidates who can start quickly to support our ongoing operations and culinary initiatives.
